Tomatoes in "ranch" dressing
1 Tbs. red wine vinegar
1 Tbs. olive oil
1/2 tsp. salt
1/2 tsp. sweetener
1-3 Tbs. green onions and herbs of your choice in the amounts in you like, minced fine
1 cup of Kefir or thin yogurt, either dairy or vegan. Here is one source which is made with coconut milk and available at lots of whole foods markets.
Drizzle over ripe sliced tomatoes. This is also wonderful on sliced cucumbers and Kalamata olives.
